Deer Camp Beans – Big Deal in a Pot

This one came from a deer camp recipe and it’s become a repeat favorite—especially when we’ve got deer sausage on hand.

Ingredients (pretty forgiving):

  • Large can of Goya Pinto Beans
  • 1 bell pepper (don’t overdo it or it gets too sweet)
  • Jalapeño (almost every recipe I know)
  • 2 tomatoes
  • 1 garlic clove
  • 1 onion
  • Salt & pepper
  • Optional heat: cayenne or red pepper flakes
  • Sausage (deer sausage is king, but any good smoked sausage works)

Quick Method: Start by sautéing the onion, bell pepper, and jalapeño for 5-10 minutes. Add the tomatoes and cook another 5 minutes. Dump in the beans and sausage (you can add the sausage earlier if you want). Season with salt, pepper, and any extra heat. Let it simmer until everything comes together.

That’s it. One pot, not a lot of fuss, and it fills the house with that “we’re eating good tonight” smell.
